Althought
the major sowing
season is over, here is a guide to what you can sow in July and August
to ensure fresh vegetables throughout autumn, winter and into next spring:
Cavelo nero, chicory, Oriental greens, peas (early varieties until the
end of July), carrots (at 10 day intervals until the end of July), chard,
French beans, spinach and spring cabbage.
What you need
Broad Bean & Feta Salad
250g of couscous, 300g of fresh broad beans, 125g of chopped spinach
leaves, a handful of chopped mint, 85g of black olives and 200g of feta
cheese.
Prepare the couscous according to the packet’s instructions. Meanwhile,
steam the broad beans for approximately 5 minutes, cool in a colander
under the cold tap, then drain. Put the spinach leaves into a colander
and pour over boiling water to wilt. Refresh under cold water and squeeze
dry. Stir the broad beans, spinach, mint and black olives into the couscous
and crumble in the feta. Drizzle with plenty of olive oil, toss and season
to taste.
