Ingredients - Serves 4
1lb fresh spinach or 1 bag frozen spinach
3 potatoes
1 onion
1 teaspoon nutmeg
2 pints vegetable stock
seasoning
Method
- Dice
the onion and fry in a little oil until softened.
- Cube
the potatoes and add to the onion along with the chopped spinach,
seasoning, nutmeg and stock.
- Bring
to the boil and simmer for ¾ hour.
- Liquidize,
reseason and reheat before serving.
