Another favourite, not so old as others, this particular recipe has
only been made in the café for 6 or 7 years. Our tribute to
French cuisine, or as has been remarked, a soup that shows how much
the English really despise the French!
Ingredients - Serves 4
2 Large Onions
2 Tablespoons White Flour
2 Tablespoons Vegetable Oil
200ml Soya Sauce
1 Teaspoon Hungarian Paprika
2 Teaspoons English Mustard Powder
1 Large Sprig Parsley
1 French Onion Stock Cube
2 Pints Water
1 Teaspoon Molasses
Method
- Peel
and cut onions in half and slice thinly.
- Put
the vegetable oil in the saucepan on a moderate heat and sauté
the onions. Once they start to cook add the soya sauce and carry
on cooking until soft.
- Add
the flour and allow to cook for 5 minutes, stirring all the while
with a wooden spoon.
- Have
a pint of the water ready in a jug, add it slowly to the pan,
stirring all the time so as to make a smooth mixture with the
flour. Once mixed add the rest of the water, the crumbled stock
cube, paprika, mustard and molasses. Turn up the heat and bring
to the boil.
- Once
boiling reduce the heat and simmer for 30 minutes.
- Before
serving, sprinkle with finely chopped parsley. Serve garnished
with croutons.
