Not
a real sponge, but an easy to make, vegan sponge which we adopted
years ago and have made ever since. It rises a treat and never gives
any problems, despite
not having any eggs in it. Non-vegans can substitute honey for the
sugar or you can use concentrated apple juice, but it does tend to
interfere with the
rise - which is why we have stuck with sugar.
Ingredients
- Serves 4 to 6
4oz (100g) white self raising flour
4oz (100g) wholemeal self raising flour
4oz (100g) margarine
4oz (100g) muscovado or soft brown sugar
2oz (50g) dried fruit - currants, raisins, sultanas
1 teaspoon baking powder
1 teaspoon ground ginger
4 to 6fl oz (125-175ml) cold water or apple juice
