A
change from the usual recipes, which are often from days of yore;
this is a recent invention by Anna and Stan. These balls are super
healthy, gluten and dairy free and seriously tasty.
Ingredients
250g
of dates
100g of sultanas
125g of goji berries
125g of cocoa nibs
100g of almond meal (+ extra for decoration)
125g of blueberries
125g of currants
200-250g of quinoa flakes
Method
- Soak
the first 3 ingredients in hot water for 1 hour

Drain a third of the water off

Place the fruit in a blender with the cocoa nibs and blend until
the mix is flecked with the colour of the goji berries

Add the almond meal, blueberries, currants and quinoa flakes

Mix well and shape into 60g (approx) balls

To decorate, roll in the almond meal or quinoa flakes
- Refrigerate
in a sealed container for 1 hour
